Ingredients
- ½ cup dried red beans
- 2 ½ cups water
- 2 tablespoons rock sugar
- 2 pieces dried mandarin peel
Instructions
- Rinse dried beans and peels.
- Open Instant Pot. Combine all ingredients into Instant Pot liner.
- Close Instant Pot. Select Pressure Cook on high for 1 hour and 10mins.
- When done, Release pressure (quick release).
- Take out peels and blend until desired smoothness.
- Select Sauté and cook for 5-10 minutes until desired thickness. Serve hot or cold.

Hi Debra, Yes, Definitely. If using a substitute such as erythritol or monkfruit sugar, start with 1 tablespoon. You can always add more sugar at the end and mix in if you prefer it sweeter.
